Oriental style Lamb Burger

INGREDIENTS
- 600 g ground lamb
- 4 burger buns
- 4 tsp harissa
- 4 tbsp onion chutney
- 2 sprigs of mint
- 1 eggplant, cut into very thin slices
- 1 pepper, cut into very tin slices
- 2 tbsp olive oil
- 2 tbsp pine nuts
INSTRUCTIONS
- In a bowl, mix the harissa with the chutney.
- In a blender, blend the leaves of one sprig of mint and add them to the meat and half of the chutney-harissa mix.
- Form patties of meat, the same size as the buns. Cook them on the plancha griddle over high heat for 5mns on each side, until the meat is cooked to perfection.
- Brush the eggplant slices with olive oil and cook them on the plancha, with the pepper slices, for 1 mn on each side. Cut the buns in half and lay them face down on the plancha until lightly browned.
- Spread remaining harissa-chutney mix on the buns’ halves (flat side). Add the eggplant slices, the meat, the pepper slices, the pine nuts, the mint leaves, and top with the other bun halves.
TIP
If you don’t like it spicy, forget the harissa !
