Onion soup a la Plancha

A Danny St Pierre recipe
INGREDIENTS
- 10 yellow onions
- 1/3 cup and 1/8 cup or 100 ml vegetable oil
- 1/3 cup and 1/8 cup or 100 gr butter
- 1/3 cup and 1/8 cup or 100 ml flour
- 1/2 cup or 125 ml withe wine
- 1 baguette
- 4 cup or 400 gr Alfred le Fermier cheese
- 1 tbsp or 15 ml Maggi
- 2 beef bouillon cubes
INSTRUCTIONS
- Heat up the plancha to a fairly high heat and oil a bit.
- Cut the onions into thin strips and vigorously sauté the salted onions.
- In a pot, prepare a roux with the flour and the butter, stir well.
Add the water and the onions, bring to a boil, add the white wine.
Lower the heat. - Rinse the plancha with water, rub with the steel wool, dry well.
- Slice the baguette, grill it on the plancha, set aside.
Place small piles of cheese on the plancha, top with croutons and remove from the heat when well toasted. - Pour some soup in some bowls, add croutons, then soup again, and serve immediately.
