IIngredients
- 16 scallops with coral
- 1 mango
- 2 passion fruits
- 2 tbsp water
- 1 tbsp sugar
- 1 tbsp lime juice
- Sunflower oil
- 2 fresh mint sprigs
- Salt and papper
- A few skewers
PREPARATION
1. Peel the mango and cut it into twelve 3/4 inch cubes. Cut what’s left of the mango into smaller cubes.
2. Scoop out the passion fruit pulp with a spoon and place it in a pan. Add the lime juice, the sugar, and 2 tbsp of water. Bring to a boil then reduce the heat and cook for 3 mns. Filter the contents of the pan and pour into a bowl. Add the smaller mango cubes. You can add more passion fruit seeds to obtain a nice crunch.
3. Heat up your plancha over a fairly high heat.
4. Put the scallops and the mango cubes on the skewers. Brush the scallop skewers with oil and place on the griddle. Brown on both sides. Turn off the griddle.
5. Place the scallop skewers on a dish. Salt and pepper.
6. Pour a little oil on the griddle and sauté quickly the coral.
7. Arrange the skeweers and the corals, baste them with the mango and passion fruit sauce. Sprinkle with some chopped mint.
